33 Cité is an innovative concept that brings energy and vigour to brasseries and Lyonnais cuisine. It was founded by three hugely-talented chefs with their finger on the gastronomic pulse in Lyon, Mathieu Viannay, Christophe Marguin and restaurant manager Frédéric Berthod. The decoration bears the hallmark of architect Pier Luigi Copat, who has made use of wood, red tones and raw materials. Large bay windows light the interior, the kitchen opens onto the dining room, a glassed wine cellar stretches along the wall and a mezzanine accommodates more intimate professional or private meals on reservation. In fine weather, a huge terrace is available for use. The serving team is welcoming and available. The scene is set: all that you need do is book your next meal for business or pleasure in this fine Lyonnais restaurant.

A new take on a traditional Lyonnais restaurant

In the kitchen, chef Frédéric Berthod, who has worked with Paul Bocuse, has devised a menu showcasing traditional recipes enhanced with creative touches, refreshing famous Lyonnais cuisine to serve inventive and appetising dishes. Here top-quality produce is used to emphasise the flavours and juices and retain the authenticity of the ingredients. The menu is creative and structured to satisfy every whim. Start, for example, with Terrine de Volaille de Bresse et Foies Blonds, Chutney, Cœur de Sucrine, vinaigrette à l'huile de pistache? followed by filet de dorade royale rôti au citron confit and madeleines tièdes au miel to finish. The value for money is excellent so why deny yourself?

He’s someone who brought chefs to the forefront of the stage as true artists

Frédéric Berthod lives and breathes cookery. He trained at a Michelin-starred restaurant on Lake Bourget and worked his way up through the ranks in equally prestigious establishments like Le Chabichou in Courchevel and Saint Tropez and later Hotel Pralon, where he was first chef de partie.

He was always on the move, spending the summer at Corsica’s Le Roi Théodore or as a chef de partie on the coast and the winter in the mountains, which isn’t a bad way to train.

1994 was an important year. He was chef de partie with Bocuse, with whom he worked for four years. He was chef de cuisine at La Brasserie du Nord, organising the opening, before contributing to the creation of La Brasserie de l’Est and later the launch of La Brasserie de l’Ouest.

In 2007, he decided to join forces with Mathieu Viannay and Christophe Marguin and open his own restaurant. He’s managed 33 Cité from the outset.

Frédéric Berthod is a perfectionist. He likes produce and nothing but the produce. His cuisine is unpretentious but not as simple as it seems. The rich flavours are provided by the carefully selected ingredients. His excellent food and service cross the borders.

    A 2 reprises la serveuse nous a apporté des plats ne nous concernant pas nous avons demandé 2 fois l'addition, et finalement sommes allés la chercher directement à la caisse
